Compatibility issues, mostly. Like it or not, Linux is still vastly undersupported for most consumer-use software and hardware.
Also, my only first-hand experience with Linux (solaris) just makes me want to hurt things. "Tools" and "Utilities" should not be separate categories! Those are synonyms!

Okay ...
1) Most hardware works out of the box with linux nowadays. Only (some) GFX cards and wifi need special drivers/firmware files, and even they download automatically.
2) Linux is NOT solaris, and solaris is NOT linux.

I'm... pretty sure it is Linux, seeing as how it's what our university's "Linux labs" are populated with.
At least I'm mostly sure it was Solaris. I suppose I could be misremembering.

It's not. I'm a consultant, and i specialize in unix and storage. I deal with solaris quite a lot in both areas. Solaris is not linux.

I can't find any information on the university website regarding which specific flavor their computers run on, but I'll take a look next time I'm in there, figure out what they use.

Gonna have to Concur with lepie. Linux =/= Solaris. Both have been developed using unix technology, but a lot of OSs have. You can't say Mac OS and Ubuntu are the same OS just because they can trace their development history back to Unix.

Could also be that your university uses SPARCs, but I doubt that. No one uses SPARC anymore. It would explain Solaris' presence in your labs, though.

Solaris is based on UNIX System V Release 4. Linux is UNIX-like, in that it emulates the appearance, functionality, and behavior of UNIX. Linux started out as a sort of clone of UNIX but has developed down it's own path. These days, Linux and UNIX aren't really that compatible.
I've worked with both Solaris and multiple distros of Linux and I would say that if Solaris is your only exposure to UNIX and UNIX-like OSes, then I understand why you are frustrated. Solaris and its associated Common Desktop Environment aren't exactly user friendly.
As far as x86 hardware compatibility, I've found that as so long as you're dealing with an Intel chipset and an Nvida GPU, it's actually easier to get a fresh install of Ubuntu, Linux Mint, Debian, or even Fedora fully operational than Windows. AMD has crappy Linux compatibility, but even that is set to change now that Valve has announced their migration to Linux with SteamOS.
I use a Ubuntu powered laptop as my primary computer and there's literally nothing that I could do with Windows that I can't do with Ubuntu.

Could I use it on my laptop? Sure. My laptop is essentially a glorified web browser.
But for my main PC, I enjoy gaming too much for it to be a viable option. Emulators are too inefficient for that. I also do a lot of video editing/compositing and photo editing/digital darkroom work, and even when programs themselves work with linux, often essential tools/external programs do not.
Also, Windows 8 can pretty much set itself up. The only thing I've needed to do is download graphics drivers from Nvidia and I'm good to go. Can't get much easier than that.

I do a lot of the same things you do. Editshare ported Lightworks to Linux earlier this year and Maya has run on Linux for years now. Most CGI shops use Red Hat workstations running Maya these days. And while I wouldn't say that GIMP is as good as Photoshop, there are a number of schools that are teaching image processing with it because it's free and open source.

Photoshop, Premiere, AE, and Lightroom are the programs I'm familiar with, so I tend to stick with those. My 3d program of choice is Blender, which I'm pretty sure has a version for every OS man has ever known or dreamed, so that's not really a limit.
